1 15 ounce can of White Northern Beans
¼ Cup chopped Green Bell Pepper
¼ Cup chopped Red Bell Pepper
¼ Cup chopped Yellow Bell Pepper
¼ Cup chopped Onion or Scallions
½ Cup Cucumber (optional)
Marinade:
1½ Tsp. Olive Oil
1 Tsp. Sugar
1 Tsp. Fresh Dill (or ¼ Tsp. Dried Dill)
¼ Tsp. Salt
1/8 Tsp. Pepper
Drain liquid from Beans. In a medium glass bowl, combine the beans, peppers, onion and Cucumber. Whisk together all ingredients for the Marinade
in a small bowl.
Pour over the vegetables and marinate for 4-24 hours.
