1-2 Lbs. Chicken
1¾ Cups Vegetable Oil
1 Cup Olive Oil
1¼ Cider Vinegar
¼ Cup Lemon Juice
3 Cloves Garlic, Minced
1 Shallot, Minced
3 Tbsp. Dijon Mustard
½ Cup Fresh Parsley, Chopped
½ Cup Dried Herbs, Basil, Thyme and Dill
Salt and Pepper to Taste
Honey or Sugar to Taste
Instructions:
Combine Mustard, Vinegar and Lemon Juice in a bowl. Then slowly pour in the Oil to create an emulsion.
Mix the rest of the ingredients and use the Honey/Sugar to cut the acidity down to your liking.
Toss in the Chicken and allow to marinate overnight.
You can cook this on the grill, stove or oven.
Serve simply on Italian bread, dice and serve with salad or shred for a zesty chicken salad.
